
Thai Inspired Zucchini Noodles
Get your daily dose of vegetables in with this Thai inspired recipe. High in protein and a great source of fiber.
Ingredients
- 2 cup Zucchini spirals
- 2 cup Carrot spirals
- 8 oz Tempeh or other protein of choice
- 1/2 tbsp Avocado oil
- 1/4 cup Natural Nut/Seed butter
- 1 tbsp Tamari
- 1/4 teaspoon Monk fruit or stevia
- 1/2 teaspoon Chili Flakes optional
- 1 tablesoons Lime Juice
- 1 teaspoon Ginger grated
- 1 teaspoon Garlic, Fresh grated
- 2 tbsp Water
- 1/2 tbsp Cilantro optional
- 1/2 tbsp Green Onion optional
Instructions
- In a small bowl mix nut butter, tamari, chili flakes, sweetener, lime juice, ginger, garlic, and water and set aside.
- To a medium skillet add oil on medium heat and add tempeh cook for 5 minutes.
- To the skillet add in spirals and sauce and stir to combine bring to a simmer. Turn off heat. Cool.
- Serve in a bowl and enjoy with cilantro and green onion.
