
Breakfast Burrito
Enjoy this burrito anytime of the day! Excellent source of protein recipe.
Ingredients
- 1 each low carb tortilla
- 3 large eggs
- 1/2 teaspoon avocado oil
- 1/4 cup onion chopped
- 1 cup kale chopped
- 1 oz feta cheese
- 1/4 cup avocado sliced
Instructions
- In a medium non-stick skillet heat oil over medium low. Add onion and cook for 1 minute. Add the eggs and stir for another minute.
- Stir in cheese and kale and continue to cook for another 1-2 minutes or until desire egg consistency. Adjust salt if needed.
- To assemble heat tortilla on a pan until warm add mixture and avocado. Fold and enjoy.
