Avocado White Bean Salad with Olive Oil Vinaigrette
This simple and quick salad is perfect for a potluck or picnic or to bring to the office for a side dish for a quick and satisfying lunch.
Serves 3 (1/2 cup each)
• 1 can Eden® no-salt added white beans or
any other white bean • 1 avocado, peeled, pitted and chopped • 1 Roma tomato, chopped • ¼ sweet onion, diced
• 1 ½ tbsp. olive oil • ¼ cup lemon juice • 1 tsp. mustard • Dried basil, to taste • Garlic powder, to taste • Salt and pepper, to taste
1. Whisk vinaigrette ingredients together then pour
over salad base and mix well.
2. Refrigerate for a few hours before serving.
